Do You Prefer Fondant or Gum Paste?

Choosing the decorative aspect of your cake can be a difficult one. There are multiple criteria that the decorations need to meet, they must not only look fantastic and artistic but they have to taste good too. For many bakeries, this is no easy task. But for the expert bakers at our Apex cake shop, our custom cakes are made deliciously beautiful. So, what do you prefer? Fondant or gum paste? Let’s discuss the differences and make sure to take note of these expert cake baking tips.

Fondant: The Basics
Whether you are using fondant for filling or for cake decorating, fondant is an excellent choice for those wanting a creamy and sweet addition to their cake. If you are purchasing custom cakes, fondant is often used for the following purposes:

  • Smooth, uniform cake icing
  • Flowers, shapes, and more
  • Fillings for eclairs, napoleons, and cakes

Fondant is usually made of three ingredients but can include all of the following:

  • Sugar
  • Shortening
  • Water
  • Corn Syrup
  • Glucose

Depending on the amount of ingredient used in the creation of fondant, different textures and tastes can be created.

Gum Paste: The Basics
Gum paste is another ingredient used when decorating cakes and can be used for a variety of decorations. The following items are primarily created with gum paste:

  • Cake Toppers
  • Flowers
  • Bows
  • 3D Figures
  • Straps
  • Shoes
  • Etc.

One of the most important cake baking tips is to not attempt to cover a cake with gum paste as it is very hard and tastes relatively bland. For those interested in making gum paste, it is generally composed of the following ingredients:

  • Egg Whites
  • Confectioners Sugar
  • Tylose Powder
  • Vegetable Shortening

Gum paste is great for adding those important extra details to your custom cakes!
